Over Labor Day Weekend I had the pleasure of going Raspberry picking with friends up near Fort Edward, NY. I picked about 2 lbs without a plan as to what I was going to do with all of them (and fit in my freezer). Then I remembered, I've been wanting to show customers what they can do to reuse their empty Off Duty Bath Salts mason jar. What makes this a 'fall' flavored jam are the notes of orange and cinnamon. You'll be surprised, but just that 1 cinnamon stick really infuses the flavor and you'll hit all the notes with each taste. Use for
PB & Js, spread on crackers with smoked cheddar or baked brie--most importantly, have fun!
* 4 cups Frozen Raspberries
* 1/4 cup Brown Sugar
* Zest of 1 Orange and its Juice
* 1 Cinnamon Stick
* 1 tsp Arrowroot Powder
Stir first 4 ingredients on medium heat for about 10 minutes, then turn up to a boil for about 20 minutes. Add in 1 tsp of Arrowroot Powder (this acts as a natural thickener) and stir (or create a slurry with some of the orange juice first to insure no clumps). When the jam starts to stick to the spatula and you can part it like the Red Sea in your pan, it's done. Set aside to let cool. Remove Cinnamon Stick and fill your clean mason jar.
